Conrad Pune gives a gentle ode to Peshawar’s culinary heritage with The Peshawar Chapter at Coriander Kitchen and Zeera

 Pune:In an age of bold flavours and louder plates, Coriander Kitchen and Zeera at Conrad Pune choose to pause with its exclusive, limited edition culinary showcase - ‘The Peshawar Chapter’. Available from 16th to 25th January to all guests, this thoughtfully curated experience draws inspiration from the understated, deeply rooted culinary traditions of Peshawar. 

Peshawari cuisine has always been shaped by time that includes patient techniques, slow simmering and recipes passed down through memory rather than measurement. Curated by Chef Rizwaan Qureshi, The Peshawar chapter draws from generations of culinary practice, bringing these principles to life through a menu that values depth, balance and restraint. Each dish on the menu unfolds gently on the palate, revealing layers of flavours that feel both comforting and profound.

From the smoky warmth of Murgh Tikka to the soulful richness of Dal-e-Qureshi and delicate balance of Subz Begum Bahar, every preparation reflects a cuisine that understands harmony intuitively. There is richness without heaviness, spice without aggression and a sense of nostalgia that lingers without overwhelming your taste buds. The limited-edition menu honours a culinary language rooted in heritage, where excellence lies in knowing when to hold back.

 

 Speaking about the inspiration behind the menu, Chef Rizwaan shares, “The food of Peshawar doesn’t impress you instantly, but it’s a preparation that you will remember long after the meal. These are dishes I’ve grown up with. It’s a cuisine that takes its time, respects ingredients and carries generational stories. With The Peshawar Chapter at Conrad Pune, I wanted to bring that sense of patience and confidence to the table.”
